Heat 1/4 cup of olive oil in a small pan over medium heat. Once shimmering, add the capers and fry until they are crispy and slightly browned, about 3-5 minutes. Be careful not to burn them. Using a slotted spoon, remove the fried capers from the pan and set them aside on a paper towel-lined plate to drain excess oil.

In the same pan (no need to clean it), add the white and black sesame seeds. Toast the sesame seeds over medium-low heat, stirring frequently, until they are fragrant and lightly golden, about 2-3 minutes. Be careful not to burn them. Remove from heat and transfer the toasted sesame seeds to a mortar and pestle.

Using the mortar and pestle, gently crush the toasted sesame seeds until they are coarsely ground. This will release their nutty aroma and flavor. Set aside.

Prepare the radicchio by removing any outer damaged leaves. Cut the head in half, remove the core, and then thinly slice the radicchio crosswise. Place the sliced radicchio in a large serving bowl.

In a separate small bowl, combine the tahini, fresh orange juice, maple syrup, 2 tablespoons of olive oil, salt, and black pepper. Whisk vigorously until the dressing is smooth, creamy, and well combined. Taste and adjust seasoning if necessary.

Pour the prepared dressing over the thinly sliced radicchio in the serving bowl. Toss the salad thoroughly to ensure every piece of radicchio is evenly coated with the creamy dressing.

Garnish the salad by scattering the crispy fried capers and the crushed toasted sesame seeds over the top. Serve immediately and enjoy this creamy, sweet, salty, and nutty salad!
