In a large mixing bowl, combine the shredded or cubed cooked chicken, finely diced celery, finely chopped shallot, sweet pickle relish, mayonnaise, chopped hard-boiled eggs, pickle juice, salt, pepper, and garlic powder.

Using a spatula or spoon, thoroughly mix all the ingredients until they are well combined and the chicken salad is creamy. Taste and adjust seasoning as needed.

To assemble each sandwich, take two slices of toasted multigrain/whole-wheat bread. Spread butter evenly over one side of each slice.

Place a few leaves of leaf lettuce on one slice of the buttered toast. Spoon a generous amount of the prepared chicken salad on top of the lettuce and spread it evenly.

Take a handful of lightly crushed potato chips and sprinkle them over the chicken salad for an extra crunch.

Place the second slice of buttered toast on top to complete the sandwich. Repeat for remaining sandwiches.

Serve the sandwiches immediately. Optionally, garnish the chicken salad with freshly ground pepper and chopped green chives or scallions if serving in a bowl.
