In a medium bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, honey, sriracha, and 1/2 cup of water until smooth. Set aside.

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned on all sides, about 5-7 minutes. The chicken does not need to be cooked through at this point.

Add the broccoli florets, sliced red bell pepper, minced garlic, and grated ginger to the pot with the chicken. Cook for 3-4 minutes, stirring frequently, until the vegetables start to soften slightly and become fragrant.

Pour the prepared peanut sauce into the pot and stir to combine with the chicken and vegetables. Bring the mixture to a gentle simmer.

Add the broken linguine or spaghetti to the pot, submerging it as much as possible in the sauce. If the sauce doesn't fully cover the noodles, add a little more water, 1/4 cup at a time, until the noodles are mostly submerged.

Cover the pot and reduce the heat to medium-low. Cook for 8-10 minutes, or until the noodles are al dente and most of the liquid has been absorbed, stirring occasionally to prevent sticking. If the sauce becomes too thick, add a splash more water.

Remove from heat. Stir well to ensure the noodles are evenly coated with the sauce and the chicken and vegetables are distributed. Garnish with sliced green onions and chopped peanuts before serving.
