Prepare the garlic aioli: In a small bowl, combine the mayonnaise, minced garlic, Dijon mustard, salt, and black pepper. Mix thoroughly until all ingredients are well combined and smooth. Set aside.

Prepare the brioche buns: Lightly butter the cut sides of each brioche bun. Heat a large skillet or griddle over medium heat. Place the buttered buns cut-side down on the hot surface and toast for 1-2 minutes, or until golden brown and lightly crispy. Remove from the skillet and set aside.

Form the beef patties: Divide the ground beef into 8 equal portions (about 3 ounces each). Gently roll each portion into a loose ball. Do not overwork the meat.

Allow them to cook for about 30 seconds. Using a sturdy spatula and a second spatula or press, firmly smash each beef ball down into a thin patty, about 1/4-inch thick. Season generously with salt and black pepper.

Flip and add cheese: Cook the patties for another 1 1/2 to 2 minutes, until a nice crust forms on the bottom. Flip the patties over. Immediately place one slice of Brie cheese on top of each patty. Continue to cook for 1-2 minutes, or until the cheese is melted and gooey and the patties are cooked through to your desired doneness. Transfer the cooked patties to a plate and repeat with the remaining beef balls and Brie cheese.

Assemble the burgers: Spread a generous layer of the prepared garlic aioli on the bottom half of each toasted brioche bun. Place one cooked patty with melted Brie on top of the aioli. Add a spoonful of bacon jam on top of the first patty. Place a second cooked patty with melted Brie on top of the bacon jam. Add another spoonful of bacon jam on the second patty. Top with the other half of the toasted brioche bun.
