Preheat your oven to 400°F. Line a baking sheet with parchment paper, ensuring it covers the entire surface to prevent sticking.

Carefully open the refrigerated grands dough tube. Unroll the dough completely and gently stretch it slightly to form a longer, more uniform log shape. This will make it easier to cut into bite-sized pieces.

Using a sharp knife or kitchen shears, cut the dough into approximately 1-inch bite-sized pieces. Aim for uniform sizes to ensure even cooking.

In a large pot, bring the 6 cups of water to a rolling boil. Once boiling, carefully stir in the 1/4 cup of baking soda until it is fully dissolved. The water may foam slightly.

Working in small batches to avoid overcrowding, drop the dough pieces into the boiling baking soda solution. Allow them to boil for 20-30 seconds. Do not exceed 30 seconds, as this can make the pretzels tough.

Using a slotted spoon, carefully remove the dough pieces from the water, allowing any excess liquid to drain off. Immediately transfer them to the prepared baking sheet, leaving a small space between each piece.

Once all the dough pieces are on the baking sheet, brush the top of each dough bite generously with the beaten egg. This will help create a golden-brown crust.

Liberally sprinkle each egg-washed dough bite with coarse pretzel salt (or flaky kosher salt). The salt will adhere best to the wet egg wash.
