In a medium bowl, combine the chickpea flour, water, salt, and turmeric powder.

Whisk the mixture vigorously until it is completely smooth and free of any lumps. Ensure all the chickpea flour is fully incorporated.

Pour the smooth chickpea mixture into a non-stick saucepan.

Cook the mixture over medium heat, stirring constantly with a whisk or spatula. Continue stirring until the mixture thickens significantly and pulls away from the sides of the pan, resembling a very thick paste or polenta.

Immediately pour the thickened mixture into a shallow, heat-proof container (such as a glass dish or loaf pan). Smooth the top with a spatula.

Place the container in the refrigerator and chill for at least 2 hours, or until the chickpea tofu is completely firm and set.

Once firm, carefully run a knife around the edges of the container, then invert it to release the chickpea tofu. Cut the tofu into desired shapes, such as cubes or slices.
