Slice the unexpired meat into strips. Place the meat strips into a bowl.

Add 1/3 teaspoon salt, 1/3 teaspoon ground pepper, 30 ml scallion & ginger water, and 1 teaspoon cornstarch to the meat. Stir well to coat the meat.

Add 1 egg to the meat mixture. Mix thoroughly by hand until well combined. Pour in 18 ml edible oil and mix again.

Heat edible oil in a wok for deep frying. Carefully place the marinated meat strips into the hot oil.

Deep fry the meat over low heat until it is golden brown. Remove the fried meat from the wok using a slotted spoon and set aside.

In a separate bowl, combine 3 teaspoons ketchup, 3 teaspoons sugar, 30 ml vinegar, 50 ml clean water, 3 teaspoons light soy sauce, and 1/3 teaspoon salt. Stir well until all ingredients are combined.

In a clean wok, add a small amount of hot oil. Pour the prepared sweet & sour sauce into the hot oil. Cook the sauce until it is bubbling.

Add the deep-fried meat into the bubbling sauce. Toss well over high heat to coat the meat evenly with the sauce.

Transfer the crispy sweet & sour meat to a serving dish. Garnish with sesame seeds, if desired.
