Ingredients
For the Salad
- 1 1/2 heads iceberg lettuce, thinly sliced
- 1 cup salami, sliced
- 1 can chickpeas, drained and rinsed
- 1 cup mozzarella cheese
- 1/4 cup pepperoncinis, chopped
- 1 red onion, small to medium, super thinly sliced
For the Dressing
- 1/4 cup red wine vinegar
- 1/3 cup extra virgin olive oil
- 2 teaspoons Dijon mustard
- 1 garlic clove, finely grated
- 1 teaspoon dried oregano
- 1 to 2 tablespoons pepperoncini juice
- salt, to taste
- black pepper, to taste
- 1/4 cup Parmesan, finely grated

In a large mixing bowl, combine all the prepared salad ingredients: the thinly sliced iceberg lettuce, sliced salami, drained and rinsed chickpeas, mozzarella cheese, chopped pepperoncinis, and super thinly sliced red onion.

In a separate medium bowl, whisk together all the dressing ingredients: red wine vinegar, extra virgin olive oil, Dijon mustard, finely grated garlic, dried oregano, and pepperoncini juice. Season with salt and black pepper to taste. Continue whisking until the dressing is smooth and well combined.
