First, prepare the Animal Style Sauce. In a small bowl, combine the mayonnaise, ketchup, sweet pickle relish, white vinegar, granulated sugar, and onion powder. Stir until well combined. Cover and refrigerate until ready to use.

Preheat your griddle to medium-high heat (approximately 375-400°F). Lightly brush a generous amount of vegetable oil or butter over the griddle surface.

Place the cut potatoes onto one section of the hot griddle. Season with salt and pepper. Cook, turning occasionally, until golden brown and crispy, about 10-15 minutes. Immediately place a slice of American cheese on top of each flipped patty. Cook for another 2-3 minutes, or until the cheese is melted and the patties are cooked through.

While the patties finish cooking, place the split brioche buns face down on an empty section of the griddle. Toast until golden brown, about 1-2 minutes.

To assemble each Animal Style Burger: Spread a generous layer of the prepared Animal Style Sauce on the bottom bun. Add a spoonful of the grilled onions. Place one cooked beef patty with melted cheese, then top with a second patty with melted cheese. Add 2 slices of cooked bacon, a slice of tomato, and a lettuce leaf. Spread more Animal Style Sauce on the top bun and place it on top of the burger.

To assemble the Animal Style Fries: Place a serving of the cooked fries on a plate. Lay 1-2 slices of American cheese over the hot fries to melt slightly. Top with a large portion of the grilled onions. Drizzle generously with the Animal Style Sauce.
