In a large mixing bowl, combine the olive oil and balsamic vinegar. Whisk gently to emulsify.

Add the quartered cherry tomatoes, peeled and diced cucumber, sliced green olives, diced red onion, and chopped fresh parsley to the bowl.

Stir in the minced garlic and red pepper flakes.

Season the mixture with salt and freshly ground black pepper to taste. Toss all ingredients gently until well combined and coated with the dressing.

Just before serving, grate fresh Parmesan cheese directly over the chopped salad.

Serve immediately as a fresh salad or as a topping for toasted crusty bread.
