Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Add 1 pound of ground Italian sausage to the pot and brown it thoroughly, breaking it apart with a spoon as it cooks. Once browned, drain any excess fat.

Add the diced yellow onion to the pot with the browned sausage. Sauté for 3-5 minutes, until the onion begins to soften.

Stir in the minced garlic, dried oregano, dried basil, dried thyme, and red pepper flakes. Cook for 1 minute until fragrant.

Pour in 6 cups of chicken broth and add the can of diced tomatoes (undrained). Bring the mixture to a simmer.

Reduce the heat to medium-low and stir in 1 cup of heavy cream. Allow the soup to gently simmer for 5 minutes.

Add 1 pound of potato gnocchi to the soup. Cook according to package directions, usually 2-3 minutes, until the gnocchi float to the surface.

Stir in 2 cups of fresh spinach until it wilts, about 1-2 minutes.

Season the Italian Sausage Gnocchi Soup with salt and pepper to taste. Serve hot.
