Slice 300g of beef sirloin into thin strips.

In a bowl, combine the sliced beef sirloin with 2 tablespoons light soy sauce, 2 tablespoons Shaoxing wine, a pinch of pepper, a pinch of baking soda, and 2 tablespoons cornstarch. Mix thoroughly to ensure the beef is well-coated.

Mince 4 cloves of garlic. Slice 1 white onion.

In a separate bowl, whisk together 1/4 cup light soy sauce, 2 tablespoons dark soy sauce, and 1 tablespoon sugar.

Prepare 100g of rice noodles (Hofan) according to package instructions, typically by soaking or boiling until tender. Drain and set aside.

Heat a pan or wok over high heat with a small amount of oil. Add the marinated beef and stir-fry until it is cooked through and lightly browned. Remove the cooked beef from the pan and set it aside.

In the same pan, add a bit more oil if needed. Add the minced garlic and sliced white onion. Sauté until fragrant and softened.

Add 50g of bean sprouts and 30g of leeks to the pan. Stir-fry briefly until they are slightly tender-crisp.

Add the cooked rice noodles to the pan with the vegetables. Pour the prepared sauce over the noodles and vegetables.

Return the cooked beef to the pan. Toss all the ingredients together vigorously to ensure everything is evenly coated with the sauce and well combined.

Transfer the Beef Hofan to a serving dish and serve hot.
