Rinse the dry lentils thoroughly under cold water. In a medium saucepan, combine the rinsed lentils and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and most of the liquid has been absorbed. Do not drain.

Transfer the cooked lentils (with any remaining liquid) to a food processor. Add the garlic powder, onion powder, smoked paprika, dried thyme, nutritional yeast, tapioca starch, salt, black pepper, and 2 tablespoons of olive oil.

Process the mixture until it forms a thick, relatively smooth paste. It's okay if there are still some small lentil pieces for texture, but it should be cohesive enough to hold its shape. Scrape down the sides of the food processor as needed.

Refrigerate the lentil mixture for at least 1 hour, or until firm enough to cut. This step is crucial for the strips to hold their shape during grilling.

Once firm, remove the lentil slab from the refrigerator. Carefully lift it off the parchment paper and place it on a cutting board. Using a sharp knife, cut the slab into strips, approximately 1-inch wide and 3-4 inches long.

Preheat a grill or grill pan over medium-high heat. Lightly brush the grill grates or pan with olive oil to prevent sticking.

Place the lentil strips on the hot grill. Grill for 3-5 minutes per side, or until golden brown with visible grill marks and heated through. Be careful when flipping, as they can be delicate.
