In a large, heavy-bottomed skillet or sauté pan, melt the unsalted butter over medium heat.

Add the packed light brown sugar and ground cinnamon to the melted butter. Stir constantly with a wooden spoon until the sugar is completely dissolved and the mixture is smooth and bubbling, about 2-3 minutes.

Carefully place the sliced bananas into the sugar-butter mixture. Cook for 1-2 minutes on each side, gently spooning the sauce over the bananas, until they are slightly softened and warmed through but still hold their shape.

Remove the skillet from the heat. Carefully pour in the dark rum and banana liqueur (if using).

Return the skillet to medium heat. Carefully ignite the rum mixture with a long match or kitchen lighter. Stand back as the flames may be high. Gently shake the pan until the flames subside, indicating the alcohol has burned off. This will take about 30 seconds to 1 minute.

Immediately serve the warm Bananas Foster over scoops of vanilla bean ice cream.
