Prepare the watermelon: Place the diced seedless watermelon into a blender. Blend until completely smooth, about 1 to 2 minutes. You may need to do this in batches depending on the size of your blender.

Strain the puree: Pour the watermelon puree through a fine-mesh sieve into a large bowl or pitcher, pressing gently on the solids to extract as much liquid as possible. Discard the pulp. You should have approximately 4 cups of watermelon juice.

Make the simple syrup: In a small saucepan, combine the granulated sugar and water. Heat over medium heat, stirring constantly, until the sugar is completely dissolved. Remove from heat and let cool completely to room temperature.

Combine ingredients: Once the simple syrup has cooled, pour it into the pitcher with the strained watermelon juice. Add the fresh lemon juice and chilled sparkling water. Stir well to combine all ingredients thoroughly.

Chill and serve: Cover the pitcher and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and chill completely. Serve cold over ice in glasses, optionally garnished with a fresh mint sprig or a watermelon wedge.
