Pat the steak dry thoroughly with paper towels. Season generously on both sides with 1 teaspoon kosher salt and 1/2 teaspoon black pepper.

Heat a large cast iron skillet or heavy-bottomed pan over high heat until smoking lightly. Add the olive oil.

Carefully place the seasoned steak in the hot pan. Sear for 2 to 3 minutes per side until a deep brown crust forms.

Reduce the heat to medium. Add 2 tablespoons of unsalted butter, 3 fresh thyme sprigs, and 2 fresh rosemary sprigs to the pan. Tilt the pan and baste the steak continuously with the melted herb butter for 2 to 3 minutes, or until it reaches your desired doneness (e.g., 125-130°F for medium-rare).

Remove the steak from the pan and transfer it to a cutting board. Let it rest for at least 10 minutes. This is crucial for juicy steak.

While the steak rests, add the peeled and deveined shrimp to the same pan (no need to clean it). Cook for 2 to 3 minutes, stirring occasionally, until the shrimp turn pink and opaque. Remove the cooked shrimp from the pan and set aside.

In a large pot, bring a generous amount of water to a rolling boil. Add 1 tablespoon of kosher salt. Add the linguine or spaghetti and cook according to package directions until al dente. Before draining, reserve 1 1/2 cups of the starchy pasta water.

While the pasta cooks, prepare the Cowboy Butter Sauce. In the same pan used for the steak and shrimp (do not clean), melt 1/2 cup of unsalted butter over medium heat.

Add the minced garlic and red pepper flakes to the melted butter. Sauté for 1 minute until fragrant, being careful not to burn the garlic.

Stir in the chopped fresh parsley, fresh thyme leaves, and finely chopped fresh rosemary leaves. Squeeze in the juice from half a lemon. Add the chicken broth and heavy cream. Stir well to combine and allow the sauce to gently simmer for 2-3 minutes, until slightly thickened.

Add the cooked pasta directly into the sauce in the pan. Add 1/2 cup of the reserved pasta water and 1/2 cup of grated Parmesan cheese. Toss vigorously to coat the pasta evenly with the sauce, adding more pasta water, 1/4 cup at a time, if the sauce is too thick.

Slice the rested steak against the grain into thin strips. Add the sliced steak and the cooked shrimp to the pasta in the pan. Toss gently to combine all the ingredients.

Serve the Cowboy Butter Steak & Shrimp Pasta immediately. Garnish with additional fresh chopped parsley and grated Parmesan cheese, if desired.
