In a large pot, combine the dried pinto beans and water.

Add the Fiesta's Pinto Bean Seasoning, chicken bouillon, Gulf Coast Smoke "That Base" seasoning, and minced garlic to the pot.

Add approximately half of the diced bacon, smoked sausage, and diced onion mixture to the pot.

Mix all the ingredients thoroughly to ensure even distribution of seasonings.

Place a lid on the pot and turn the heat to high. Bring the mixture to a rolling boil.

Once boiling, continue to boil the beans for 30 minutes.

After 30 minutes, turn off the heat. Keep the lid on and let the beans sit, covered, for 1 full hour.

After the hour of resting, turn the heat to medium-high.

Add the two 10-ounce cans of Rotel Diced Tomatoes & Green Chilies (undrained) to the pot.

Add the remaining portion of the diced bacon, smoked sausage, and onion mixture to the pot.

Stir everything together well.

Continue to cook the beans on medium-high heat, stirring occasionally, until they are nice and tender. This can take anywhere from 60 to 90 minutes depending on the beans.

Once the beans have reached your desired tenderness, turn off the heat.

Stir in the diced jalapeños and chopped cilantro. Adjust amounts to your personal taste.
