Preheat your oven or toaster oven to 375°F (190°C).

Place the 2 thick slices of artisan bread in a dry pan over medium heat. Toast them until they are golden brown and crispy on both sides, about 2-3 minutes per side. Alternatively, you can toast them in a toaster.

Once toasted, take the 2 split garlic cloves and vigorously rub the cut sides over both sides of the warm toasted bread. This will infuse the bread with a delicious garlic flavor.

Heat a separate pan over medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of olive oil. Once the butter has melted and the oil is shimmering, add the 4 ounces of sliced mushrooms to the pan. Sauté the mushrooms, stirring occasionally, until they release their moisture and turn golden brown, about 5-7 minutes.

Add 1 teaspoon of minced garlic to the sautéed mushrooms. Cook for 1 minute more, stirring constantly, until fragrant. Ensure everything is well mixed.

Evenly distribute the sautéed mushrooms over the garlic-rubbed toasted bread slices.

Generously sprinkle 1/2 cup of shredded mozzarella or Gruyère cheese over the mushroom-topped toasts.

Place the assembled toasts onto a baking sheet and into the preheated oven or toaster oven. Bake until the cheese is completely melted, bubbly, and slightly golden, about 5-7 minutes.

Remove the toasts from the oven. Season with salt and black pepper to taste, and then sprinkle fresh chopped parsley over them before serving immediately.
