Preheat your oven to 375°F (190°C). Lightly grease an 8x8 inch (20x20 cm) baking dish.

In a large mixing bowl, combine the sliced apples, 1/4 cup granulated sugar, 1 teaspoon ground cinnamon, lemon juice, and cornstarch. Toss gently until the apples are evenly coated.

Transfer the apple mixture to the prepared baking dish. Distribute the 2 tablespoons of butter pieces evenly over the apples.

In a separate medium mixing bowl, whisk together the all-purpose flour, 1/2 cup granulated sugar, light brown sugar, and 1/2 teaspoon ground cinnamon.

Add the cold butter cubes to the dry ingredients. Using your fingertips or a pastry blender, cut the butter into the flour mixture until coarse, pea-sized crumbs form. If using, stir in the rolled oats.

Evenly sprinkle the crumble topping over the apple filling in the baking dish.

Bake for 35 to 45 minutes, or until the topping is golden brown and the apple filling is bubbling around the edges. If the topping starts to brown too quickly, you can loosely cover the dish with aluminum foil.

Remove the apple crumble from the oven and let it cool on a wire rack for at least 15 minutes before serving. This allows the filling to set slightly.
