Prepare the Spicy Peanut Sauce: In a small bowl, combine the peanut butter, soy sauce, hoisin sauce, lime juice, sesame oil, warm water, and chili garlic oil. Whisk vigorously until the sauce is smooth and creamy. Set aside.

Prepare a shallow dish or pie plate with warm water. This will be used to soften the rice paper wrappers.

Working with one rice paper wrapper at a time, submerge it in the warm water for 15-20 seconds, or until it is soft and pliable but not overly sticky. Carefully remove it from the water and lay it flat on a clean, damp surface (like a cutting board or large plate).

Arrange the fillings in the center of the softened wrapper, leaving about 1 inch clear on the sides. Start with a piece of lettuce, then add a small amount of red cabbage, julienned carrots, cucumber, red bell pepper, a few slices of avocado, fresh cilantro, and 2-3 halves of cooked shrimp.

To roll the summer roll, first fold the bottom edge of the wrapper up over the fillings. Then, fold in the left and right sides of the wrapper. Finally, tightly roll the wrapper from the bottom up, creating a snug, burrito-like roll. Place the finished roll seam-side down on a serving platter.

Repeat steps 3-5 with the remaining rice paper wrappers and fillings until all ingredients are used. You should have approximately 12 summer rolls.

Serve the fresh summer rolls immediately with the prepared spicy peanut dipping sauce on the side.
