Prepare the carrots by peeling them into thin ribbons using a vegetable peeler. Place the carrot ribbons into a large mixing bowl.

Add the rice vinegar, soy sauce, sesame oil, and minced garlic to the bowl with the carrot ribbons.

Mix the carrots and seasonings thoroughly by hand until all ingredients are well combined.

Transfer the carrot mixture to a pan. Lightly cook or stir-fry the mixture for about 2 minutes, tossing with chopsticks or tongs to ensure even cooking.

Remove the pan from the heat and let the cooked carrot mixture cool down. This will take approximately 10 minutes.

Once cooled, squeeze the juice of one whole lemon over the carrots in the mixing bowl.

Add sesame seeds to taste.
