Preheat your oven to 180°C (350°F).

In a large mixing bowl, combine the rolled oats, cocoa powder, baking powder, and a pinch of salt. Whisk these dry ingredients together until well combined.

Add the plant-based milk, maple syrup, and vanilla extract to the dry ingredients in the bowl.

Whisk all the ingredients together thoroughly until the mixture is well combined and smooth. Ensure there are no dry pockets of oats or cocoa powder.

Stir in the 1/2 cup of chocolate chips into the oatmeal mixture.

Pour the prepared mixture evenly into a baking dish.

Generously sprinkle additional chocolate chips over the top of the mixture in the baking dish. This will create a delicious melted chocolate topping.

Bake the oatmeal in the preheated oven for 20-25 minutes, or until the edges are set and the center is mostly firm.

Once baked, carefully remove the brownie baked oatmeal from the oven. Let it cool for a few minutes before serving.
