Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, combine the diced zucchini, diced eggplant, sliced carrots, chopped red bell pepper, and red onion cut into wedges.

Drizzle 2 tablespoons of extra virgin olive oil over the vegetables.

Add the spices: 1 teaspoon ground cumin, 1 teaspoon ground coriander, 1 teaspoon smoked paprika, 1/2 teaspoon ground cinnamon, 1/2 teaspoon sea salt, and 1/4 teaspoon black pepper.

Toss the vegetables thoroughly to ensure they are evenly coated with the oil and spices.

Spread the seasoned vegetables in a single layer on the prepared baking sheet.

Roast for 25–30 minutes, stirring halfway through, until the vegetables are tender and lightly caramelized.

Meanwhile, bring 1 1/2 cups of vegetable broth, 1 tablespoon of olive oil, and 1/2 teaspoon of turmeric to a boil in a saucepan.

Once boiling, remove the saucepan from the heat.

Stir in 1 1/2 cups of Moroccan couscous, cover the saucepan, and let it stand for 5 minutes.

After 5 minutes, fluff the cooked couscous with a fork.

Add the roasted vegetables, 1 cup of drained and rinsed cooked chickpeas, 1/4 cup of chopped fresh parsley, 2 tablespoons of chopped fresh mint, 1/4 cup of toasted sliced almonds, 2 tablespoons of raisins (or dried cranberries), and the juice of 1/2 lemon to the couscous.

Toss gently until all ingredients are well combined.

Serve warm or at room temperature.
