Preheat your oven to 180°C. Line a small oven-safe dish with parchment paper.

Peel the ripe banana and place it into a medium-sized mixing bowl.

Using a fork, thoroughly mash the banana until smooth, with no large lumps remaining.

Add the 100g of Greek yogurt and the egg to the mashed banana in the bowl.

Whisk all the ingredients together until they are well combined and the mixture is smooth.

If desired, add vanilla extract and/or sweetener to the mixture and whisk again to combine.

Add the 50g of blueberries to the mixture. Gently fold the blueberries into the batter, being careful not to crush them.

Pour the cheesecake mixture into the prepared oven-safe dish.

Bake the cheesecake in the preheated oven for 30 minutes, or until set and lightly golden on top.

Once baked, carefully remove the cheesecake from the oven. Let it cool slightly before serving.

Garnish with fresh blueberries and a mint leaf, if desired, before serving.
