Prepare the broccoli by washing and cutting it into 1-inch florets. Mince the garlic and grate the fresh ginger. Set aside.

In a small bowl, whisk together the low-sodium soy sauce, rice vinegar, light brown sugar, cornstarch, and water until the cornstarch is fully dissolved. This is your stir-fry sauce.

Heat a large wok or skillet over medium-high heat. Add the vegetable oil and 1/2 teaspoon of the sesame oil. Once the oil is shimmering, add the broccoli florets.

Stir-fry the broccoli for 4 to 6 minutes, or until it is tender-crisp and bright green. You want a slight char on some of the florets. Remove the broccoli from the wok and set aside.

Reduce the heat to medium. Add the minced garlic and grated ginger to the wok. Sauté for 30 seconds to 1 minute, until fragrant, being careful not to burn the garlic.

Give the prepared stir-fry sauce another quick whisk, then pour it into the wok. Stir continuously until the sauce thickens, about 1 to 2 minutes.

Return the stir-fried broccoli to the wok with the thickened sauce. Toss to coat the broccoli evenly. Remove from heat.

Drizzle with the remaining 1/2 teaspoon of sesame oil and sprinkle with toasted sesame seeds before serving immediately.
