Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or cast-iron skillet.

In a large skillet, heat the olive oil over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5 to 7 minutes. If using links, slice them into 1/2-inch pieces and brown them.

Drain any excess fat from the skillet. Add the chopped yellow onion and bell pepper to the skillet with the sausage. Cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes.

Stir in the frozen mixed vegetables, garlic powder, onion powder, paprika, salt, and black pepper. Continue to cook for another 3 to 5 minutes, until the frozen vegetables are heated through and tender-crisp.

Add the frozen tater tots to the skillet with the sausage and vegetable mixture. Stir gently to combine all ingredients evenly.

Transfer the hash mixture from the skillet to the prepared baking sheet, spreading it into an even layer. Bake in the preheated oven for 15 to 20 minutes, or until the tater tots are golden brown and crispy.

Remove from the oven. Garnish with fresh chopped parsley, if desired. Serve hot with ketchup or hot sauce on the side, and a fried or poached egg on top for a heartier meal.
