Cook 1 cup of rice according to package instructions. Once cooked, spread it out on a plate or shallow dish to cool to room temperature. This will take approximately 15 minutes.

Cube 1/2 can of Spam into small, bite-sized pieces and set aside.

In a large pan, spray with cooking oil spray and heat over medium heat. Add the cubed Spam and toast on all sides until slightly browned, about 3 minutes.

Add 1 tablespoon of soy sauce, 1 tablespoon of granulated sugar, and 2 tablespoons of BBQ sauce to the pan with the Spam. Continue to cook for another 3 minutes, stirring occasionally, until the sauce thickens to your desired consistency. Remove the BBQ Spam mixture from the pan and set aside.

In a small bowl, whisk 3 eggs until well scrambled.

Using the same pan, spray with cooking oil spray and heat over medium heat. Pour in the scrambled eggs and cook, stirring gently, until they are just set, about 1 minute. Remove the scrambled eggs from the pan and set aside.

In a large mixing bowl, combine the cooled cooked rice, the prepared BBQ Spam, the scrambled egg, and 4 tablespoons of furikake.

Mix all ingredients thoroughly until well combined. Then, form the mixture into round balls, about the size of a golf ball or slightly larger, pressing firmly to ensure they hold their shape.

Wrap each rice ball with a strip of seaweed. Garnish the tops with a drizzle of Kewpie mayo and a sprinkle of chopped chives.
