While the chicken is frying, prepare the sauce. Heat 1 tablespoon of olive oil in a wok or large skillet over medium heat. Add the grated ginger, minced garlic, and dried chilies. Cook, stirring frequently, until fragrant, about 1-2 minutes.

Add the orange juice, rice vinegar, low-sodium soy sauce, brown sugar, sesame oil, and gochujang to the wok. Bring the mixture to a boil.

In a small bowl, whisk together the remaining 2 tablespoons of cornstarch with 2 tablespoons of cold water to create a slurry. Once the sauce is boiling, slowly whisk in the cornstarch slurry. Continue to stir until the sauce thickens to your desired consistency.
