Place the chicken breast in a medium pot and cover with water. Bring to a boil over medium-high heat, then reduce heat to a simmer and cook for 20 minutes, or until the chicken is cooked through.

Remove the cooked chicken breast from the pot and let it cool slightly. Once cool enough to handle, shred the chicken using two forks.

While the chicken is cooking and cooling, prepare the vegetables and nuts. Finely chop the celery, red onion, and pecans.

Halve the red grapes.

In a large mixing bowl, combine the shredded chicken, chopped celery, chopped red onion, halved red grapes, and chopped pecans.

Add the mayonnaise, Dijon mustard, salt, black pepper, and fresh dill to the bowl with the chicken mixture.

Mix all the ingredients together thoroughly until well combined and the chicken is evenly coated.

Serve the Summer Chicken Salad immediately, or chill for at least 30 minutes for enhanced flavor. This salad is delicious on a croissant, in lettuce cups, or as a side dish.
