Pat the steaks dry thoroughly with paper towels. Season generously on both sides with kosher salt and freshly ground black pepper.

Heat the olive oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until shimmering and just starting to smoke.

Carefully place the seasoned steaks in the hot skillet, ensuring not to overcrowd the pan. Sear for 3-4 minutes per side for medium-rare, or longer for desired doneness. Do not move the steaks during this time to allow a good crust to form.

During the last 2 minutes of cooking, add the unsalted butter, smashed garlic cloves, and fresh rosemary sprigs to the skillet. Tilt the pan and spoon the melted butter mixture over the steaks repeatedly to baste them.

Remove the steaks from the skillet and transfer them to a cutting board. Tent loosely with foil and let them rest for at least 5 minutes. This allows the juices to redistribute, resulting in a more tender steak.

While the steaks are resting, prepare the salad. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, kosher salt, and freshly ground black pepper to create the dressing.

Pour the dressing over the salad ingredients and toss gently to coat.
