Cut the 500g chicken thighs into bite-sized pieces.

In a bowl, combine the cut chicken thighs with 1 tablespoon sesame oil, 1 teaspoon salt, 1 teaspoon sugar, 1/2 teaspoon white pepper, 1 tablespoon minced ginger, 1 tablespoon spring onion (white parts), and 1 tablespoon Shaoxing wine.

Mix all ingredients well with the chicken. Marinate for at least 30 minutes, or overnight for best results.

Place the marinated chicken into a steamer basket.

Add 1 1/2 cups of water to a pot suitable for steaming, then carefully place the steamer basket inside the pot.

Cover the pot and steam the chicken for 20 minutes.

After steaming, remove the chicken from the steamer. Carefully pour all the accumulated chicken juice from the steamer plate into a separate bowl and set aside.

Shred the steamed chicken into smaller, bite-sized pieces.

To prepare the sauce, heat 1 tablespoon oil in a pan.

Add 1 tablespoon minced garlic, 1 tablespoon spring onion (green parts), and 1 tablespoon minced ginger to the hot oil. Sauté until fragrant.

Add 1 tablespoon soy sauce and 1 tablespoon oyster sauce to the pan, stirring to combine.

Pour the reserved chicken juice into the sauce mixture and bring to a gentle simmer, mixing everything together.

Pour the hot sauce evenly over the shredded steamed chicken.

Serve immediately.
