In a large mixing bowl, combine the 90g granulated sugar, 90g coconut sugar, 1/8 teaspoon salt, 25g all-purpose flour, 250g tapioca starch, and 10g Thai tea powder. Whisk thoroughly to combine all the dry ingredients.

Crack 1 egg into the dry mixture. Pour in 250g coconut milk.

Whisk all ingredients together until a smooth batter is formed.

Filter the batter through a fine-mesh sieve into another clean bowl to remove any lumps.

Cover the bowl with plastic wrap and chill the mixture in the refrigerator for 3 hours before use.

Heat a flat-bottomed pan (like a crepe pan) over medium heat. Lightly brush the pan with oil.

Pour a small amount of the chilled batter into the hot pan and quickly swirl the pan to spread the batter thinly and evenly across the bottom.
