In a bowl, combine 1 cup (240ml) of warm water, 1 teaspoon of sugar, and 1 teaspoon of active dry yeast. Mix gently and let the mixture sit for 5 minutes until it becomes foamy.

Add 2 1/2 cups (300g) of all-purpose flour, 1 teaspoon of salt, and 1 tablespoon of olive oil to the yeast mixture.

Mix the ingredients until a shaggy dough forms, then knead the dough for 5 minutes until it is smooth and elastic.

Cover the bowl with the dough and let it rise in a warm place for 1 hour, or until it has doubled in size.

Once risen, punch down the dough to release the air and divide it into 8 equal pieces. Roll each piece into a smooth ball.

In a separate bowl, combine 1 lb (450g) of ground beef, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and 1 tablespoon of Worcestershire sauce.

Mix the ingredients thoroughly until well combined, then form the mixture into 8 small, evenly sized patties.

In another bowl, combine 1/2 cup of mayonnaise, 1 tablespoon of ketchup, 1 tablespoon of mustard, 1 teaspoon of pickle juice, 1/2 teaspoon of smoked paprika, 1/4 teaspoon of garlic powder, and 1/4 teaspoon of onion powder.

Mix all sauce ingredients together until smooth and well combined.

Take one dough ball and flatten it into a disk shape.

Place one beef patty in the center of the flattened dough.

Top the patty with a slice of cheddar cheese.

Add a few dill pickle slices on top of the cheese.

Carefully fold the edges of the dough over the patty, bringing them together at the top and sealing them completely to form a closed bun around the filling. Ensure there are no gaps for the filling to escape.

Repeat this process for the remaining dough balls and patties.

Place the assembled closed burger buns on a baking sheet lined with parchment paper.

Brush the tops of the buns with 1 tablespoon of melted butter.

Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the buns are golden brown and cooked through.

Once baked, remove the closed burgers from the oven. Carefully cut each bun in half and spread a generous amount of the prepared sauce inside before serving.
