Unwrap the tuna and place it on a clean cutting board. Slice the tuna into strips, then further slice those strips into bite-sized pieces or desired shapes.

In a small microwave-safe dish, combine the mirin and sake.

Microwave the mirin and sake mixture for 30-60 seconds, or until it comes to a gentle simmer, to burn off the alcohol. Be careful not to let it boil over. Let it cool slightly.

Place the sliced tuna into a mixing bowl. Pour the microwaved (and slightly cooled) mirin and sake mixture over the tuna in the bowl.

Add the soy sauce to the tuna and mirin/sake mixture. Use chopsticks or a spoon to gently mix the tuna thoroughly with the marinade until well combined.

Finely chop the fresh shiso leaves.

Let the tuna marinate at room temperature for at least 10 minutes. While the tuna marinates, prepare your rice bowls.

For each serving, prepare a bowl of warm cooked rice. Drizzle about 1 tablespoon of the tuna marinade sauce over the cooked rice.

Add shredded nori on top of the sauced rice.

Carefully arrange the marinated tuna slices over the rice and nori in each bowl.

Drizzle a little more of the marinade sauce over the arranged tuna in each bowl.

Sprinkle sesame seeds over the tuna. Garnish each dish with the finely chopped shiso.

The Tekka Don is now ready to serve. Enjoy immediately!
