Preheat your oven to 360°F. If your leftover collard greens contain smoked turkey neck bones, carefully remove them and chop the greens into smaller, dip-friendly pieces.

In a large mixing bowl, combine the chopped collard greens with the softened cream cheese, mayonnaise, and sour cream. Mix thoroughly until well combined.

Add the shredded smoked Gouda cheese, mild cheddar cheese, mozzarella cheese, and provolone cheese to the collard green mixture. Stir to incorporate all the cheeses evenly.

Season the dip with garlic powder, onion powder, black pepper, and cayenne pepper (if using). Taste and adjust seasonings as desired.

Transfer the mixed dip into a 9x9 inch baking dish or an aluminum foil pan, spreading it evenly.

Top the dip with an additional layer of your chosen shredded cheese blend.

Bake the dip in the preheated oven for 10 to 15 minutes, or until it is heated through and bubbly around the edges.
