Preheat your oven to 400°F. Place half a head of garlic on a piece of aluminum foil. Drizzle the garlic with 1 teaspoon of olive oil and sprinkle with 1/4 teaspoon of salt. Wrap the garlic completely in the foil.

Roast the wrapped garlic in the preheated oven for 25-30 minutes, or until the cloves are soft and golden brown. Once roasted, remove from the oven and let cool slightly.

While the garlic is roasting, finely chop the red chili and grate the Parmesan cheese.

In a medium bowl, combine the mayonnaise, grated Parmesan cheese, freshly squeezed juice from half a lemon, chopped red chili, dried oregano, and red pepper flakes. Once the roasted garlic has cooled, squeeze the soft cloves from their skin into the bowl with the other sauce ingredients.

Whisk all the sauce ingredients together until they are well combined and smooth. Set aside.

Prepare two separate shallow bowls. In the first bowl, whisk the 2 large eggs to create an egg wash. In the second bowl, place the seasoned breadcrumbs.

Take each chicken tender and dip it into the egg wash, ensuring it is fully coated. Then, transfer the chicken tender to the breadcrumbs bowl and coat it thoroughly with the breadcrumbs, pressing gently to make sure the breading adheres.

Heat 1 cup of cooking oil in a large skillet or frying pan over medium-high heat. Once the oil is hot (a small piece of breading should sizzle immediately), carefully place the breaded chicken tenders into the pan, being careful not to overcrowd the pan. You may need to cook them in batches.

Pan-fry the chicken tenders for approximately 3-4 minutes on each side, or until they are golden brown, crispy, and cooked through (internal temperature reaches 165°F). Remove the cooked chicken tenders from the pan and place them on a wire rack set over a paper towel-lined plate to drain any excess oil.

Once all chicken tenders are cooked, place them into a clean large bowl. Pour the prepared garlic Parmesan sauce over the chicken tenders. Mix well to ensure all the chicken tenders are thoroughly coated with the sauce.

Serve the garlic Parmesan chicken tenders immediately and enjoy!
