Begin by boiling the penne pasta according to package directions. Before draining, make sure to save 1 cup of the pasta water.

In a pan, warm up 2 tablespoons of oil. Add the chopped half onion and 2 tablespoons of chopped garlic. Sauté for a few minutes until fragrant and softened.

Incorporate 4 tablespoons of tomato paste into the pan and cook for two minutes, stirring constantly. Next, add salt (to taste), 1 teaspoon of red chilli flakes, 1/2 teaspoon of garlic powder, 1 teaspoon of oregano, 1 teaspoon of black pepper powder, and 1/2 teaspoon of cayenne pepper or red chilli powder. Mix all the ingredients well to combine.

Pour in 1/3 cup of heavy cream along with 1 cup of the reserved pasta water. Mix everything thoroughly and let it cook for 2 minutes on a medium flame. Add 2 tablespoons of butter and allow it to melt and incorporate smoothly into the sauce.

Add the boiled penne pasta to the sauce in the pan and mix well to coat. Sprinkle shredded mozzarella cheese over the pasta. Optionally, garnish with additional red chilli flakes, fresh or dried parsley, and Italian seasoning on top. Serve and enjoy!
