Add 1 cup of softened unsalted butter, 1 cup of light brown sugar, and 1/2 cup of sugar to the bowl of a stand mixer.

Using the paddle attachment, cream together the butter and sugars until well combined.

Scrape down the sides of the bowl to ensure all ingredients are incorporated.

Add 2 room temperature eggs to the mixture and continue mixing until fully incorporated.

Pour in 2 teaspoons of vanilla extract and mix briefly to combine.

In a separate bowl, measure out 3 cups (375g) of all-purpose flour.

Add 1 teaspoon of baking soda, 1 teaspoon of salt, and 1 teaspoon of corn starch to the flour.

Stir the dry ingredients together with a spoon.

Place a sieve over the stand mixer bowl containing the wet ingredients.

Sift the dry ingredients (flour, baking soda, salt, corn starch) into the wet mixture.

Mix the dough in the stand mixer until the dry ingredients are just combined with the wet, being careful not to overmix.

Add 2 cups of chocolate chips to the dough.

Using a spatula, fold the chocolate chips into the dough until evenly distributed.

Line a baking sheet with parchment paper.

Scoop portions of the cookie dough and place them onto the prepared baking sheet, leaving space between each cookie.

(Optional) Place a few extra chocolate chips on top of each cookie dough ball.

Bake at 350°F for 12-15 minutes until golden. The top should still look underbaked.

Remove from oven and let the cookies cool down for 10 minutes before serving.
