Prepare the vegetables: finely dice the onion, grate the carrot, and finely chop the cabbage.

In a large mixing bowl, combine the chicken mince, diced onion, grated carrot, and chopped cabbage.

Roll the rice paper tightly from the bottom upwards to form a compact dumpling. Repeat steps 6-10 for the remaining filling.

Heat about 1/2 inch of oil in a large pan or skillet over medium heat. Ensure the oil is hot enough before adding dumplings (a small piece of rice paper should sizzle immediately).

Carefully place the formed dumplings into the hot oil, ensuring not to overcrowd the pan. Fry in batches if necessary.

Fry the dumplings for 3-5 minutes per side, or until they are golden brown, crispy, and the chicken filling is cooked through. You may need to adjust heat to prevent burning.

Remove the cooked dumplings from the pan and place them on a plate lined with paper towels to drain excess oil. Serve immediately with your favorite dipping sauce.
