Slice the cucumbers into rounds, approximately 1/4 inch thick.

Place all the sliced cucumbers into a metal mixing bowl. Add 1/4 teaspoon of salt to the cucumbers and mix thoroughly.

Let the salted cucumbers "sweat" for about 5 to 10 minutes to release excess water.

While the cucumbers are sweating, prepare the sauce. In a separate small bowl, combine the red pepper flakes, sugar, fish sauce, sesame oil, apple vinegar, and minced garlic.

Mix all the sauce ingredients thoroughly with a spoon until well combined into a paste.

After the cucumbers have sweated, drain the excess liquid from the cucumber bowl.

Add the prepared sauce to the drained cucumbers. Put on gloves and thoroughly mix the sauce into the cucumbers by hand until all cucumber pieces are evenly coated.

Add the sesame seeds to the mixture and mix again to distribute them evenly.

The spicy cucumber dish is now ready to serve.
