Preheat your grill to a temperature between 350°F and 390°F. Aim for approximately 375°F for even cooking.

Carefully take each large croissant and partially slice it open lengthwise, creating a pocket without cutting all the way through.

Generously fill the pocket of each croissant with mini marshmallows and semi-sweet chocolate chips. Distribute them evenly among the four croissants.

Place the filled croissants directly on the preheated grill. Close the lid and grill for 10 to 12 minutes, or until the marshmallows are completely melted, the chocolate is gooey, and the croissants are golden brown and slightly crispy.

Carefully remove the Viking S'mores from the grill using tongs. Serve immediately while hot and gooey.
