In a large mixing bowl, combine the ground pork sausage, shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Use your hands to thoroughly mix the ingredients until well combined.

Lay one egg roll wrapper flat on a clean surface. Place about 1 1/2 tablespoons of the sausage mixture near one corner of the wrapper, forming a small log shape. Do not overfill.

Fold the corner closest to the filling over the mixture. Then, fold in the two side corners towards the center. Roll the wrapper tightly away from you until you reach the opposite corner. You can dab a little water on the final corner to help seal it if needed.

Repeat the filling and rolling process with the remaining sausage mixture and egg roll wrappers. You should have approximately 16 bites.

Preheat your air fryer to 375°F. Lightly spray the inside of the air fryer basket with olive oil spray.

Place the sausage bites in a single layer in the air fryer basket, ensuring not to overcrowd. You will likely need to cook them in 2-3 batches. Lightly spray the tops of the bites with olive oil spray.

Air fry for 8-10 minutes, flipping them halfway through, until they are golden brown and the internal temperature of the sausage reaches 160°F. The cooking time may vary slightly depending on your air fryer model.

Remove the cooked bites from the air fryer and repeat with any remaining batches. Serve warm with your favorite dipping sauces like ketchup or ranch dressing.
