In a medium saucepan, combine the mixed berries, granulated sugar, lemon juice, and water. If using fresh strawberries, you may want to halve or quarter them depending on their size.

Place the saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally to help dissolve the sugar and prevent sticking.

Reduce the heat to low and continue to simmer for 10 to 12 minutes, or until the berries have softened and released their juices, and the compote has thickened slightly. Stir occasionally, gently mashing some of the berries with the back of a spoon if you prefer a chunkier texture.

Remove the saucepan from the heat. Stir in the vanilla extract and lemon zest (if using). Taste the compote and add more sugar if desired.

Serve the berry compote warm or at room temperature. It can also be chilled and served cold. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
