Wash the mushrooms thoroughly and pat them completely dry using a clean kitchen towel or paper towels.

In a large bowl, combine the dried mushrooms with 1/4 teaspoon of salt, 1/4 teaspoon of black pepper, 1/4 teaspoon of paprika, 1/4 teaspoon of Italian herbs, and 2 tablespoons of vegetable oil. Mix well with a spoon until all the mushrooms are evenly coated with the spices and oil.

Line a baking tray with parchment paper. Transfer the seasoned mushrooms to the prepared baking tray, spreading them out in a single layer to ensure even roasting.

Bake the mushrooms in the preheated oven for approximately 30 minutes, or until they are browned and cooked through. The baking time may vary slightly depending on the size of your mushrooms.

While the mushrooms are roasting, prepare the dressing. Finely chop the fresh dill and fresh parsley.

In a separate medium-sized bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of vegetable oil, 3 cloves of minced garlic, the finely chopped fresh dill, and the finely chopped fresh parsley.

Mix the dressing ingredients thoroughly with a spoon until they are well combined.

Once the mushrooms are roasted and hot, carefully remove them from the oven and immediately add them to the bowl containing the prepared dressing.

Toss the hot mushrooms and dressing together until all the mushrooms are evenly coated. Serve immediately and enjoy!
