Preheat your oven to 375°F (190°C). Grease or line your baking pan.

In a medium bowl, whisk together the all purpose flour, baking powder, salt, and 1 teaspoon of cinnamon for the dough.

Slightly warm the milk (you can do this in the microwave for a few seconds). Then, mix in the 1 teaspoon of vanilla and 1 tablespoon of melted butter into the warm milk.

Pour the wet ingredients into the dry ingredients. Mix until a soft dough forms, being careful not to overmix. Stop as soon as the ingredients are just combined to ensure a soft and pillowy texture.

Lightly flour your work surface. Roll the dough into a log, then flatten it slightly. Cut the dough into 20 even pieces.

In a small bowl, combine the 3 tablespoons of sugar and 1 tablespoon of cinnamon for the coating. Take each dough piece, toss it in the 1 tablespoon of melted butter, then coat it fully in the cinnamon sugar mixture.

Arrange the coated cinnamon roll bites in a single layer in your prepared baking pan, leaving a little space between each piece. Do not stack them.

Bake for 9 to 10 minutes, or until the bites are lightly golden. Be careful not to overbake, as this can make them dry.

While the cinnamon roll bites are baking, prepare the glaze. In a small bowl, whisk together the powdered sugar, heavy cream, 1/2 teaspoon of vanilla, and vanilla bean or vanilla bean paste until smooth. Adjust the thickness with more powdered sugar or cream if needed.

Once baked, let the cinnamon roll bites cool in the pan for 1 to 2 minutes. Drizzle the vanilla bean glaze generously over the warm bites and serve immediately.
