Place the cut pork spare ribs into a bowl.

Add all-purpose flour to the ribs and gently massage it into the meat until coated.

Rinse the floured ribs thoroughly with water and then drain them.

Place the rinsed and drained ribs into a wok.

Stir-fry the ribs over high heat until their color changes, about 5-7 minutes.

Add 30 grams of scallion and 30 grams of ginger to the wok.

Add 250 grams of sliced apple to the wok.

Stir-fry the contents until an aroma comes out, about 2-3 minutes.

Add 1/3 teaspoon of salt to the wok.

Pour in 3 teaspoons of light soy sauce.

Add 1 teaspoon of oyster sauce.

Stir-fry all the ingredients together over high heat for 1 minute.

Add 800 ml of boiling water to the wok, ensuring the ribs are mostly submerged.

Cover the wok with a lid and simmer for 30 minutes.

After simmering, remove the lid and use chopsticks to pick out and discard the spice solids (scallion, ginger, and apple slices).

Add 1 teaspoon of black vinegar to the ribs in the wok.

Sprinkle 1 teaspoon of white sesame seeds over the ribs.

Mix it well over high heat, stirring with a spatula.

Once the sauce has thickened and coated the ribs, dish up the stir-fried pork spare ribs onto a serving plate.
