Preheat your oven to 350°F (175°C). Lightly grease and flour a standard loaf pan, or line it with parchment paper.

In a large mixing bowl, mash the 3 ripe bananas thoroughly with a fork until they are smooth with no large lumps remaining.

To the mashed bananas, add the 3 eggs, 1/4 cup maple syrup, and 1 teaspoon vanilla extract. Whisk these wet ingredients together until they are well combined and smooth.

In a separate medium bowl, combine the 2 1/2 cups almond flour, 1/2 cup cacao powder, and 1 teaspoon baking soda. Whisk these dry ingredients together until they are evenly mixed and there are no visible clumps of cacao powder.

Add the dry ingredient mixture to the wet ingredient mixture. Using a spatula, gently fold the ingredients together until they are just combined. Be careful not to overmix, as this can lead to a tough banana bread.

If desired, fold in 1/2 cup of chocolate chips and/or 1/4 cup of chopped walnuts into the batter. Mix gently until evenly distributed.

Pour the banana bread batter into the prepared loaf pan. Smooth the top with the spatula.

Sprinkle additional chocolate chips and a pinch of flaky sea salt over the top of the batter in the loaf pan, if desired.

Bake in the preheated oven for 50 minutes to 1 hour, or until a wooden skewer or toothpick inserted into the center comes out clean. Mine took 50 minutes.

Once baked, remove the loaf pan from the oven and let the banana bread cool in the pan for 10-15 minutes before carefully transferring it to a wire rack to cool completely. Slice and enjoy!
