Preheat your oven to 375°F (190°C).

In a large mixing bowl, combine the softened cream cheese, sour cream (or ranch dressing), and buffalo hot sauce. Whisk vigorously until the mixture is thoroughly combined and smooth, forming an orange-colored creamy base.

Add the cooked, shredded or diced chicken, 1 1/2 cups of shredded mozzarella cheese, and 1/4 cup of sliced green onions to the creamy buffalo mixture. Using a spatula, mix all ingredients until the chicken, cheese, and green onions are evenly coated.

Transfer the entire dip mixture into a cast-iron skillet or an 8x8 inch baking dish, spreading it out evenly. Top the dip with the remaining 1/2 cup of shredded mozzarella cheese.

Bake in the preheated oven for 20 to 25 minutes, or until the dip is hot and bubbly around the edges and the top layer of cheese is melted and golden brown.

Carefully remove the dip from the oven. Garnish generously with the remaining freshly sliced green onions. Serve immediately with blue corn tortilla chips and celery sticks for dipping.
