Place the hard-boiled eggs into a medium-sized mixing bowl. Using a fork, mash the eggs thoroughly until they are finely chopped and crumbly.

Add the mayonnaise, chopped fresh parsley, and curry powder to the mashed eggs. Season with salt and freshly ground black pepper.

Mix all the ingredients in the bowl thoroughly with the fork until well combined and a creamy, yellow-green mixture is formed.

Lay out two slices of white sandwich bread on a clean cutting board. Spread 1 tablespoon of softened butter evenly over one side of each bread slice.

Spread 1 tablespoon of fruit chutney generously over one of the buttered slices of bread.

Spoon about 1/4 of the prepared egg mixture over the fruit chutney layer on the bread, spreading it evenly to the edges.

Place one leaf of butter lettuce on top of the egg mixture.

Place the second slice of buttered bread on top of the lettuce to form the sandwich. Gently press down on the sandwich to help it hold together.

Using a sharp knife, carefully cut the sandwich in half, either diagonally or straight down the middle. Repeat steps 4-8 for the remaining sandwiches.
