Add the peeled garlic cloves to a small saucepan and cover them completely with olive oil. Cook over very low heat for 20-25 minutes, or until the garlic cloves are soft and easily spreadable. Remove from heat and let cool slightly.

While the garlic is cooking, finely chop the fresh parsley and shred both the mozzarella and Parmesan cheeses.

In a small bowl, combine the honey with the crushed red pepper. Set aside.

Once the garlic confit has cooled slightly, transfer the garlic cloves and about 2 tablespoons of the infused olive oil to a food processor. Add the softened butter, chopped parsley, salt, and black pepper.

Preheat your oven to 400°F (205°C). Slice the ciabatta loaf in half lengthwise.

Place the sliced ciabatta loaf, cut-side up, on a baking sheet lined with parchment paper.

Generously spread the prepared garlic butter over the cut surfaces of the bread, ensuring it gets into all the crevices.

Layer the shredded mozzarella cheese evenly over the garlic butter. Lightly sprinkle the shredded Parmesan cheese over the mozzarella.

Drizzle a small amount of olive oil over the cheese.

Bake in the preheated oven for about 15 minutes, or until the cheese is bubbly, melted, and lightly browned, and the bread is crisp underneath.

Remove the garlic bread from the oven. Garnish with additional fresh parsley and drizzle the hot honey (honey combined with crushed red pepper) over the top.
